I originally saw this recipe on Living for Life and it has since become one of my favourites. As the name suggests these coconut energisers do give you a nice boost of energy I have found. Especially in the afternoon after another training session at the gym these are excellent.
What you will need to make these:
- 500g dried coconut
- 1/2 cup coconut oil
- 1 tablespoon coconut sugar
- Process all ingredients on speed 8 on 37 degrees for 3 minutes.
- Pour into little ice cube moulds and leave to set. These will set easily during colder months even left outside of the fridge.
