Gluten free psyllium and coconut bread with seeds






I have previously found in the past that my body seems to be happier when I eat less gluten and therefore I am always trying out new things where I aim to eliminate as much gluten as possible. I recently made a bread by combining coconut flour, psyllium and seeds. It went great with my raw jam and kept me full for a very long time.

To make this healthy bread you will need the following:

  • 95g coconut flour
  • 65g psyllium
  • 1.5 teaspoons baking powder
  • 3 eggs
  • 350g water or more if needed
  • 50g chia seeds
  • 50g sesame seeds
  • 50g flaxseeds
  • 50g sunflower seeds
  • 20g coconut oil
  1. First combine all ingredients apart from the water in a big bowl and mix well.
  2. Next start adding the water and keep mixing it in in stages until a dough forms.
  3. Shape into a bread loaf by hand and bake on 200 degrees for about 40-50 minutes.

Coconut Energisers Recipe



I originally saw this recipe on Living for Life and it has since become one of my favourites. As the name suggests these coconut energisers do give you a nice boost of energy I have found. Especially in the afternoon after another training session at the gym these are excellent.

What you will need to make these:
  • 500g dried coconut
  • 1/2 cup coconut oil
  • 1 tablespoon coconut sugar
  1. Process all ingredients on speed 8 on 37 degrees for 3 minutes.
  2. Pour into little ice cube moulds and leave to set. These will set easily during colder months even left outside of the fridge.

Raw Coconut Sweets



I wanted to share the recipe to make some of my favourite sweets using coconut, cashews and raw honey.

You will need:
  • 160g desiccated coconut
  • 40 cashews 
  • 100g raw honey
If you have a thermomix process the above on speed 8 for about 30 seconds. If you have a food processor process the ingredients until a sticky dough forms.

Next roll the dough into little balls and place in the freezer to set for about 30 minutes.
