Cauliflower Soup

On the weekend we were lucky enough to get some gorgeous cauliflower for about half price. We didn't know at first what we would end up doing with it but tonight we felt like cauliflower soup. Lately it has been getting colder here in Perth; the other morning it even had 10 degrees when we woke up! So this was the perfect meal for the night and so nourishing with all the veggie goodness! Perfect after a run and a strength workout.


Ingredients
  • 30g Parmesan or other cheese
  • 600g water
  • 800g Cauliflower florets
  • salt
  • 20g oil
  • 2 tablespoons flour
  • 20g butter
  • nutmeg (optional)

  1. First grate cheese for 10 seconds on speed 8 and set aside.
  2. Next place water, cauliflower and salt into bowl and cook for 15minutes 100 degrees on speed one.
  3. Add in flower, oil and butter to cook for another 5 minutes 100 degrees on speed one.
  4. Once finished blend it for 1 minute slowly increasing from speed one to speed eight.
Add cheese and nutmeg and serve.

We finished this soup in one go, it was that good! Something I enjoy about colder weather is making nourishing and warming soups!
