Miso Soup



This is one of Manuel's and one of my favourites; Miso Soup. Miso is a fermented soya bean paste which raises the nutritional value if used for cooking in many dishes. It adds a lot of flavour to dishes but also aids digestion. Miso Paste is known to strengthen the immune system and it also contains anti-aging properties.

To make miso soup
  1. Bring about for cups water to a simmer and add about 1 tablespoon seaweed (I use nori or wakame)
  2. Allow to simmer for about 5 to 6 minutes; the longer you simmer the less fishy the taste
  3. Reduce the heat to low and add 3 green onions, 1/2 block tofu and a dash of soy sauce. In the above I also added some asian greens.
  4. Last add the miso and stir until well disolved. It is best to use the lowest possible heat when making miso soup so that the soup will still contain many of its healthy properties.
