Easy Indian Pumpkin Recipe



I love Indian food. How the spices and love that goes into the food preparation seem to nourish the body on many levels. I find the food balancing and grounding. My favourite spice is cumin, one of the many stars in this easy recipe. This Indian pumpkin is one of the recipes you want to bookmark for the days where you don't have the time to prepare a lengthy meal but still want to nourish your body.

Ingredients:

  • 4 cups of pumpkin
  • 2 tbsp of coconut oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • salt and pepper to taste
  • fresh coriander to garnish (optional)

  1. Chop the pumpkin into 1cm thick pieces.
  2. Melt the coconut oil in a big pan.
  3. Add the spices and stir so that the aroma can unfold.
  4. Add the pumpkin and stir.
  5. Cover and cook until the pumpkin is tender.
  6. Serve with fresh coriander and raw sauerkraut if you like.

Surprise Soup Recipe - to warm up the body and soul!



Some days it's nice to have some type of recipe that helps use up any left over vegetables in your fridge. I love this soup because it is that kind of a recipe! Every time this soup turns out slightly different and it is healthy too.

If you like you can also spice it up with adding some of your favourite spices or I would imagine that chili would give it a delicious kick too if you enjoy spicy food.

Plus how beautiful can a nice hot bowl of soup be on a cold winter day to warm up the body and soul.

Not too long ago I read somewhere that soups are some of the most nourishing foods or dishes for the body. I think that alone is reason enough to give this soup a go and make it your own! Let me know with what interesting flavours and creations you come up with!

The one in the picture was made with broccoli, one of my many favourites.

Ingredients
  • 30g rice or lentils (or you can use 100g potatoes if you prefer)
  • 2 cloves garlic
  • 1 onion cut into quarters
  • 300g vegetables chopped
  • 2 tsp olive oil
  • water plus 1 tsp vegetable stock concentrate for every cup of water
  • salt and pepper to taste
  1. Grind lentils or rice for 30 seconds on speed 8.
  2. Add garlic, onion and vegetables and chop for 15 seconds on speed 5.
  3. Add olive oil and saute for 5 minutes on 100 degrees speed 1.
  4. Add water up to the 1.5 litre mark on the bowl and 1 tsp of vegetable stock concentrate for every cup of water that you add.
  5. Cook for 15 minutes on 100 degrees speed 1.
  6. Blend soup for about 1 minute by slowly going up to speed 7.
  7. Serve with some fresh bread if you like and enjoy!
